Santa Maria Style BBQ Beans

 
 

 
2 Lbs Betteravia Poquitos beans
1 envelope chili mix.
2 cloves garlic, minced.
1/2 Lb bacon, diced
1/2 Lb ground beef.
1/2 Tsp. pepper.
2 to 4 Tsp. salt.
1/2 Tsp. oregano.
1 1/2 cups tomato juice.
 
Cover beans generously with water. Bring to a boil and add salt and pepper. Turn heat to simmer and cook two hours or until tender. (Beans may be soaked to reduce cooking time). Sauté bacon, onion, garlic, seasonings, chili mix, tomato juice and ground beef. Add mixture to beans and simmer 1 hour. Makes 10-16 servings.

 
 


Santa Maria Style BBQ Salsa

 
   
3 medium fresh tomatoes, chopped
1/2 cup finely chopped celery
1/2 cup finely chopped green onions
1/2 cup finely chopped California Green Chiles
2 tbs. snipped cilantro
1 tbs. vinegar
dash Worcestershire sauce pinch garlic salt
pinch dried oregano, crushed few drops of hot pepper sauce
 
Combine all ingredients in a bowl. Cover and let stand for one hour to blend flavors. Makes 3 1/2 cups of salsa.
